Vegan Devon Guide interviews

We are planning to run a series of interviews here and we’d love to feature any fully vegan companies, campaigns or groups based in Devon.

We ask you to answer seven questions which you choose from a list. Here are a few of the questions with our answers, to give you an idea of the type of questions!

What is a favourite simple vegan recipe to prepare at home?
I have the recipe below at least once a week for breakfast, it’s a cross between overnight oats and chia pudding. I’m always struggling to find breakfasts I like, and love this one. Plus point: it saves time in the morning because you can prepare it the night before.

  • 1/4 cup rolled oats
  • 1 tablespoon chia seeds
  • 1 tablespoon desiccated coconut
  • 2/3 cup (160 ml) plant milk
  • 1 tsp maple syrup or agave
  • 1/4 teaspoon cinnamon

Mix together and leave in the fridge overnight. It’s nice served with vegan yogurt and some fresh berries or bananas on top.

What is a favourite quote?

What is a favourite childhood food memory?
Eating tea at my grans.

What inspires you?
Thinking about what animals go through each and every day and trying to do something, however small, to change this. Social media sites such as Tamara Kenneally Photography, Eden Farm Sanctuary and Happily Ever Esther show us the day to day lives of animals at their sanctuaries. These are in such sharp contrast to the lives of animals on factory farms, in laboratories and other places that it really brings home how things need to change.

What is a favourite cookbook?
Prashad Indian Vegetarian Cooking by Kaushy Patel. I learnt a lot about Indian cooking from this book including my favourite ever curry which is paneer masala (a sublimely cheesy curry with a kick, just sub in vegan cheese). Most of the recipes in the book can be made vegan, if they aren’t already.

What are some of your pet peeves in the kitchen?
Dishes in the sink!
